Okay, we know avocado is the vegetable—or fruit, for those purists out there—of summer, but this spout of warm weather is tricking our tastebuds into thinking that we’re nearing May.
Avocados pretty much go with everything, right? People even put it on ice cream in Brazil (I corroborated this story with a Brazilian friend). You may have discovered that avocado with a little lime and Himalayan salt goes amazingly on a piece of whole wheat sourdough. If you are doing the challenge, you may have never known that putting a fried egg on top of your avocado toast was the breakfast that you had been dreaming about but never found. Yet, as much we love this green vegetable—or fruit—we get tired of it, and it is so easy to reach for that room-temperature butter that you got out just in case. Life is short, so don’t completely deprive yourself of the room-temperature butter, but don’t think for a second that avocado toast has to be the regular olive oil and salt combo! Venture out and try these toppings to spice up your avocado toast game.
If you are not down to have avocado on top of your ice cream, adding pomegranate seeds is a sweet way to have your avocado toast. Simply mash avocado with lemon, kosher or Himalayan salt, and top with pomegranate seeds. To ramp up the sweetness, add other fruits like mango, pears, and oranges.
If your heart is telling you guacamole but your mind is telling you no chips, take it to a piece of whole wheat bread. Smash the avocados with fresh lime juice, then to make it a fiesta, add black beans, tomatoes, onions, and corn. Add a few dashes of chili powder with the lime or salt for a little bit of heat.
If you are wanting to try something a little more subdued, mix the avocados with lemon, garlic powder, Himalayan salt, and pepper, then top with sliced radishes. Not only do the radishes add some crunch and extra color, but they also add some fiber. For an extra punch of crunch, top with Chia seeds or pine nuts.
This is good if you tend to crave all things Italian. Add diced avocado to a piece of whole wheat baguette, then add sliced fresh mozzarella and tomatoes. Top with ribbons of fresh basil, as well as drizzles of extra virgin olive oil and balsamic vinegar. The house sommelier recommends pairing with a nice Chianti (just kidding).
When all else fails, adding eggs and [turkey] bacon cannot hurt. Dice the avocado, and spread with scrambled cage-free eggs, crispy turkey bacon, and diced tomato.
